Edelweiss is a cold-hardy white hybrid bred by Elmer Swenson and released in 1978, a cross of Minnesota 78 and Ontario. Originally selected as a table grape, it became a mainstay of northern winemaking in Minnesota, Wisconsin, Iowa, and Nebraska, where its extreme winter hardiness matters more than pedigree.
Flavors & Aromas
Grapey and floral with white peach, citrus, and honey, carrying a distinct labrusca note that becomes assertive if the fruit is picked late.
Winemaking & Aging
Usually made off-dry to sweet, since residual sugar balances the foxy character; early picking is the standard technique for a cleaner, drier style. Moderate acidity, light body, low alcohol. Survives temperatures below −40°F, making it viable in very short-season regions. Best consumed young — within 1–2 years.
